With just a few simple ingredients, you can easily make a jar of pickled radishes with red cabbage and red onion. The vegetables stay nice and crunchy, and thanks to the vinegar they develop a deep color and a fresh, slightly sweet flavor. Perfect as a side dish with stews, in a sandwich, or simply as a fresh salad.

Preparation
- In a saucepan over low heat, combine the water, vinegar, and sugar. Stir and bring just to a boil, then immediately turn off the heat.
- Let the liquid cool completely.
- Thinly slice the red cabbage using a mandoline. Slice the radishes in the same way and separate the red onions into petals.
- Add all the vegetables to the cooled pickling liquid and let them rest in the refrigerator overnight.
- The next day, sterilize the glass jars. Pack the vegetables into the jars, add the spices, and cover with the liquid, which will have turned a deep purple color
