Pickled Radishes

With just a few simple ingredients, you can easily make a jar of pickled radishes with red cabbage and red onion. The vegetables stay nice and crunchy, and thanks to the vinegar they develop a deep color and a fresh, slightly sweet flavor. Perfect as a side dish with stews, in a sandwich, or simply as a fresh salad.

Ingredients:

  • 1 pack of radishes 
  • 1 red cabbage 
  • 2 red onions 
  • Pink peppercorns, to taste 
  • Mustard seeds, to taste 
  • Black peppercorns, to taste 
  • 1 liter of wine vinegar 
  • 100 g sugar 
  • 500 ml water

Equipment

  • Mandoline or sharp knife 
  • Glass jars with airtight lids 

Preparation Time

  • 30 minutes + 12 hours resting time 

Preparation

  1. In a saucepan over low heat, combine the water, vinegar, and sugar. Stir and bring just to a boil, then immediately turn off the heat. 
  2. Let the liquid cool completely. 
  3. Thinly slice the red cabbage using a mandoline. Slice the radishes in the same way and separate the red onions into petals. 
  4. Add all the vegetables to the cooled pickling liquid and let them rest in the refrigerator overnight. 
  5. The next day, sterilize the glass jars. Pack the vegetables into the jars, add the spices, and cover with the liquid, which will have turned a deep purple color

💡 Store in the refrigerator. Delicious as an accompaniment to braised meat or served as a fresh salad.
