This radish tarte tatin is a tasty, savory take on a classic French dish. Caramelized radishes baked under puff pastry, finished with feta, thyme, and a honey-balsamic glaze. Great as a starter, for brunch, or a light vegetarian meal.
Ingredients
- 1 package of ready-made puff pastry
- 45 grams of unsalted butter
- 4 radish bunches
- 2 tablespoons of wildflower honey
- 2 tablespoons of balsamic vinegar
- 1 bunch of fresh thyme
- 125 grams of feta cheese
- sugar to taste

- On a non-stick baking tray, brush with butter and sprinkle with sugar.
- Wash the radishes thoroughly, remove the leaves, and pat them dry with a clean cloth or paper towel.
- Arrange the radishes to completely cover the surface of the tray.
- Bake for 30 minutes in a preheated oven at 180°C (350°F).
- Remove from the oven and let it cool down; the liquid from the radishes will thicken with the sugar, creating a caramel.
- Once everything is cooled, cover with a sheet of puff pastry.
- Create holes with a fork all over the pastry sheet, then bake for 45 minutes at a steady temperature of 170°C (340°F).
- Meanwhile, crumble the feta.
- In a small bowl, mix the honey, balsamic vinegar, and thyme.
- Remove from the oven and let cool completely. Once cooled, flip it over onto a flat plate and brush with the honey-vinegar-thyme mixture and finish it off with the feta and a few leaves of thyme.
Tip: The radish tarte tatin is also delicious with some finely chopped hazelnuts for an extra crunch.
