Radish Oyster Delight

Radish Oyster Delight

Looking for a festive appetizer? These radish oyster delights are a fun way to start any celebration. Radishes aren’t just great in Prosecco, they also make a tasty sauce and a nice garnish for oysters. Paired with a touch of dill and a drizzle of spicy oil, radishes turn simple oysters into a fresh, celebratory treat.

Ingredients

  • 100g natural Greek yogurt
  • 1 pack of radishes
  • 1 shallot
  • 12 oysters
  • Bunch of dill
  • Salt
  • Pepper
  • Spicy oil
  • Crushed ice

Equipment

  • Oyster knife
  • Blender

Preparation Time

  • 30 minutes

Preparation

  1. In a small bowl, mix the yogurt with salt, pepper, and some radishes. Blend everything together to create a smooth, pink cream, and refrigerate for at least 1 hour before serving.
  2. Clean the shallot, slice it thinly, and let it sit in water for at least half an hour to remove the strong flavor.
  3. Carefully cut the muscle at the base of the oyster shells’ joint to open them.
  4. Serve the oysters on a bed of ice, garnish with the radishes and dill, and add a few strands of shallot.
  5. Place the sauce in the center and add a few drops of spicy oil.

Tip: Serve your Radish Oyster Delight with Radisecco — Sparkling Prosecco with a radish for a splash of color and a little bite.
