Ingredients:Recipe radish salmon tartelettes

  • 200g radishes
  • 500g fresh salmon
  • 150g Philadelphia cheese
  • 1 package of currants
  • 1 package of filo pastry
  • Butter for greasing
  • Chives
  • 2 tablespoons extra virgin olive oil
  • Salt to taste
  • Pepper to taste

Equipment:

  • 12 muffin cups

Preparation Time:

  • 30 minutes

Preparation:

    1. Finely chop the radishes and keep them in ice water.
    2. Remove the bones and skin from the salmon and steam it for 5 minutes.
    3. Finely chop the chives with a knife.
    4. In a separate bowl, add the Philadelphia cheese, the radishes drained from the ice water and dried, chives, salt, oil, and the warm salmon. Blend everything with a food processor and let it rest in the fridge for 1 hour.
    5. Lay out 4 sheets of filo pastry, cut them into 4 pieces. Using a kitchen brush, lightly coat each sheet with melted butter.
    6. Grease the inside of 12 aluminum muffin cups and line them with a square sheet of filo pastry.
    7. Transfer the mixture into a piping bag and fill the filo pastry cups.
    8. Arrange the 12 cups on a baking sheet (it will be easier to handle them later).
    9. Bake for 6 minutes at 180°C.
    10. Decorate generously with radishes, currents, and chives

Best eaten cold, but also great when served warm!
