Radish Sushi Donut

Radishes are commonly used in many Asian cuisines because of their fresh, slightly spicy taste and nice crunch. In these sushi donuts, they go well with avocado, cucumber and sesame. The result is a fun twist on sushi that tastes fresh and light. Perfect for lunch, a snack or a summer dish.

4-6 sushi donuts

Ingredients:

  • 180 g rice
  • 1 tablespoon coconut oil
  • 1 package of radishes
  • 3 yellow cherry tomatoes
  • 1/2 cucumber
  • 1/2 avocado
  • Juice of 1 lime
  • 1 tablespoon black sesame seeds
  • 1 tablespoon poppy seeds
  • 1 tablespoon lemon juice
  • 1 tablespoon sesame oil
  • 2 tablespoons hot sauce
  • 150 g mayonnaise
  • Salt to taste

Preparation

  1. Bring a pot of salted water to a boil and cook the rice for about 12 minutes. Turn off the heat, add the lime juice, and let the rice cool in its cooking water. 
  2. Grease donut-shaped molds with the coconut oil. 
  3. When the rice is slightly warm, spoon it into the molds using a lightly oiled spoon. Press it down well and place in the refrigerator for at least 1 hour. 
  4. Wash all the vegetables thoroughly and cut them as desired (slices, cubes, or julienne). 
  5. In a small bowl, mix the lemon juice, sesame oil, and hot sauce until it becomes a spicy sauce.
  6. Carefully remove the rice donuts from the molds and place them on a serving plate. Decorate with cherry tomatoes, radishes, cucumber, and avocado. Sprinkle with black sesame seeds and poppy seeds, and add small dollops of mayonnaise.

💡 You can replace the spicy sauce with soy sauce for a more traditional flavor.
