These Radish Salmon Tartelettes are a delicious blend of creamy smoked salmon, crunchy radishes and fresh currents in a flaky filo pastry shell. Perfect as an elegant appetizer or snack, they’re sure to impress whether served warm or cold. At Ortolanda we love it!
Ingredients:
- 200g radishes
 - 500g fresh salmon
 - 150g Philadelphia cheese
 - 1 package of currants
 - 1 package of filo pastry
 - Butter for greasing
 - Chives
 - 2 tablespoons extra virgin olive oil
 - Salt to taste
 - Pepper to taste

Preparation:
- Finely chop the radishes and keep them in ice water.
 - Remove the bones and skin from the salmon and steam it for 5 minutes.
 - Finely chop the chives with a knife.
 - In a separate bowl, add the Philadelphia cheese, the radishes drained from the ice water and dried, chives, salt, oil, and the warm salmon. Blend everything with a food processor and let it rest in the fridge for 1 hour.
 - Lay out 4 sheets of filo pastry, cut them into 4 pieces. Using a kitchen brush, lightly coat each sheet with melted butter.
 - Grease the inside of 12 aluminum muffin cups and line them with a square sheet of filo pastry.
 - Transfer the mixture into a piping bag and fill the filo pastry cups.
 - Arrange the 12 cups on a baking sheet (it will be easier to handle them later).
 - Bake for 6 minutes at 180°C.
 - Decorate generously with radishes, currents, and chives
 
Best eaten cold, but also great when served warm!
